SEVEN LAYER SALAD

"This is a refreshing salad."
Mix together one cup mayonnaise and one teaspoon sugar
Layer the following, in this order:
Lettuce
Half of the mayonnaise mixture
Diced green onions
Sliced peppers
Diced celery
Frozen peas
Lettuce
Remaining mayonnaise mixture
Grated cheddar cheese
Bacon bits
Diced tomato
Cover and chill for at least 30 minutes before serving.
Amounts needed for layers will vary depending on how many you need to serve
and how large a container you are using.
Chocolate Mallow Dessert
Crust:
3 cups crushed vanilla wafers
2/3 cups butter or margarine, melted
1/4 cup sugar
1/2 teaspoon cinnamon
Mix crust ingredients well. Set aside 1/3 cup for topping. Press remaining
crust into the bottom of a greased 9 x 13-inch pan. Refrigerate until firm.
Filling:
1 milk chocolate bar (7 ounces) plain or with almonds, broken into pieces
1 package (10 ounces) large marshmallows
1 cup milk
2 cups whipping cream, whipped
1/2 teaspoon vanilla
Sliced almonds (optional)
In a saucepan, heat candy bar, marshmallows and milk over medium-low heat
until melted, stirring often. Remove from heat. Cool to room temperature.
Fold in whipped cream and vanilla; pour over crust. Chill for four hours.
Sprinkle with reserved crust mixture and almonds.
Zucchini Dish
In a large bow, mix:
4 eggs, slightly beaten
1 cup biscuit mix
1/2 cup oil
3/4 cup Parmesan cheese
In another bowl, mix:
4 cups sliced, unpeeled zucchini
2 tablespoons chopped parsley
2 large cloves garlic, finely chopped
3/4 teaspoon salt
3/4 cup finely chopped onion
1 teaspoon oregano

Add zucchini mixture to egg mixture and stir. Spread in a greased 9x13-inch pan. Bake at 350 degrees for 25 to 30 minutes. Cut when cool.

Chocolate Chip Banana Bread
"This has been a family favorite for 10 years."
1 1/2 cups butter, softened
3 cups mashed banana
2 teaspoon baking soda
12 ounces mini chocolate chips
3 cups sugar
4 cups flour
1 cup milk
4 eggs
2 teaspoons salt
2 teaspoons vanilla

Preheat oven to 375 degrees. Grease two 9x5x3-inch loaf pans. Cream sugar and butter. Add mashed bananas, eggs, vanilla. Mix well. In another bowl, mix the flour, salt and baking soda. Mix the flour into the banana mixture a little at a time. Mix in milk and chocolate chips. Bake for 1 hour and 45 minutes.

Shrimp Pasta with Tomatoes and Fresh Basil
18 ounces shrimp
4 teaspoons olive oil
5 teaspoons capers
6 tablespoons fresh basil, chopped
2 cans (15 ounces each) crushed tomatoes
3 cloves garlic, minced
1 can (14 ounces) black olives, pitted
1/4 cup white cooking wine
1 1/2 teaspoon red pepper flakes
12 ounces bow-tie pasta, cooked.

In a large skillet, heat olive oil and saut¿arlic until golden. Add olives, capers and wine, cover and cook on medium heat until liquid evaporates. Immediately add tomatoes and cook uncovered until sauce is chunky but no longer waters (about 15 minutes), then add shrimp and heat through until shrimp turn pink. Pour in prepared pasta, basil and red pepper flakes. Stir well and serve.
