Crab Cakes w/ Dill Sauce and Mango Salsa
Serve with cheese grits and a light salad for a great spring or summer meal.
olive oil butter 1 lb. fresh crab meat (or more) 1 egg 1/4 cup mayonnaise 1 teaspoon lemon juice 1/2 teaspoon red pepper 1 tablespoon Old Bay or seafood seasoning 1 teaspoon ground fresh ginger 3 tablespoons crushed butter crackers additional crushed crackers for coating Mix all ingredients together and chill for two hours. Coat with additional crackers and cook in mixture of olive oil and butter until brown. Serve with dill sauce and mango salsa on the side. Dill Sauce 1/2 cup sour cream 1/2 cup plain yogurt 2 tablespoons fresh or 1 tablespoon dried dill salt to taste Combine all ingredients and chill.
Mango Salsa 1 ripe mango, chopped 1 each red, yellow and green bell pepper, chopped 1 small purple onion, chopped 1 small can green chilis 1 tablespoon fresh ginger 1/2 cup fresh cilantro, chopped juice of one lime pinch of red pepper and salt to taste Combine and chill at least two hours before serving.
